Here are some details on the german ships in japanese service.
Bemerhaven was sold on 06.08.1940
Augsburg (6512 BRT - Norddeutscher Lloyd, Bremen) was sold om 05.12.1940
Fulda (7744 BRT - Norddeutscher Lloyd, Bremen) was sold in 1940
For Mosel i have some other information as Øistein Thomas Berge (My source is "Dinklage / Witthöft" Die deutsche Handelsflotte).
Mosel came in autom 1941 to Japan and was chartered by the japanese, struck a mine on 01.03.1945 and was captured after 08.05.1945
Havenstein (7974 BRT - Hamburg-Amerikanischen Packetfahrt-Aktien-Gesellschaft (HAPAG)) was taken over by the Kriegsmarine on 26.04.1941 and then chartered by the japanese. Lost 1944 in a Taifun
Saarland (6725 BRT - Hamburg-Amerikanischen Packetfahrt-Aktien-Gesellschaft (HAPAG)) was sold on 30.09.1940
Ursula Rickmers (5050 BRT - Rickmers Reederei AG, Hamburg) was taken by the Kriegsmarine in Kobe and chartered by the japanese. Sunk by the submarine USS-Flasher on 03.05.1944 at position 12°54'N, 114°07'O
Scharnhorst (18184 BRT - Norddeutscher Lloyd, Bremen) - she was sold to the japanese Navy (converted to carrier Shinyo). Sunk by the submarien USS-Spadefish at Position 33°02'N, 123°33'O.
R.C. Rickmers (5198 BRT - Rickmers Reederei AG, Hamburg) was taken over by the Kriegsmarine and chartered to japanese. She was sunk on 22.12.1942 by USS Trigger at Position 34°52'N, 139°49'O
Winnetou was sold in April 1942 ????
No german ship was captured before the end of the war in europe. The ships were either sold or on charter (even they got japanese names)
Augsburg = Teiryu Maru
Fulda = Teikai Maru
Havenstein = Teisho Maru
Saarland = Teiyo Maru
Ursula Rickmers = Teisen Maru
R.C. Rickmers = Teifuku Maru
I've checked my books for the final date of Mosel. Here the result.
"Dinklage / Witthöft" Die deutsche Handelsflotte uses both dates - in the text they write 01.03.1945 and at the end of the book with the final fates of the ship they use the date 18.04.1945
"Roger W. Jordan is using the 01.03.1945 too in his book the world's merchant fleets 1939

Hello.
Teikon Maru 5113 brt.
Build 1913 at Howardtswerke.
She was torpedoed and sunk by the US. submarine Puffer on August 12th 1944 off the west coast of Mindoro Island, Philippines.
Teiun Maru 1615 brt.
Build 1920 at Bremer Vulkan.
She struck a mine and sunk on January 1st 1942 off the west coast of Luzon Island, Philippines.
Teizui Maru 8428 brt.
Build 1927 at A G Weser.
She was taken over by the Japanese on November 2nd 1942. She struck a mine and sank on April 18th 1945 off Yawata, Japan.

Dear Axel and Øistein,
Many thanks for the info. I am still working on
my list with captured Allied ships in Japanese service (which is also to include German and Italian ships taken over). Another few gaps filled :)
